Hello everyone! Thank you for visiting my blog. Today I'm going to share a very simple, fresh and crispy salad recipe with you. Here you can see the picture of the ready product. If you like fresh, crispy vegetables and croûtons on top with a slightly tangy taste and flavor of lemon, you are going to like it :) :) :) But let's start from the beginning! :)

- Lettuce (a bunch)
- Carrots (2 medium size)
- Beet root (1 medium size)
- Lemon (1/2 lemon)
- Onion (1/2 medium size)
- Sweetcorn (1 can)
- Coriander (a small bunch)
- Spring onions (5 pieces)
- Mint (a small bunch)
- Vegetable oil (1 full tablespoon; use live oil if you like)
- salt (to your liking)
- black pepper (1/3 teaspoon)
- paprika (1 teaspoon)
- chili (I'm using a pinch, you can add a little bit more if you feel like it)
- First thing you should do is to peel and cut the carrots, the beetroot and the onion. Then slice the carrots and the beetroot into thin and long slices. Then cube the onion and add to the vegetables. Chop the coriander, the spring onions and the mint and add to the vegetables in the bowl. Add a can of sweetcorn, then add the seasonings (salt, black pepper, paprika, chili) and give it a good stir. As you have done it, tear the lettuce leaves with your hands and add to the mixture. Drizzle the leaves with vegetable oil and toss and mix into the vegetables (you can use two wooden spoons or spatulas to do this). Just before you serve the salad drizzle it with lemon juice. It will add a pleasant sour taste and it'll freshen up the salad.
- I decided to serve this vegetable salad with croûtons. This is how I made them. I cut the bread into thin slices, sprinkled them with vegetable oil and a paprika and roasted them in a frying pan.
- This is how they turned out. After they cooled down I placed them on top of the salad.
